It is hard to prepare your lunch sensibly in the stress of everyday life, and a keto lunch on top of that. Or is it?
Wrong! We would like to show you that, just as with your keto breakfast, you do not have to go without your keto lunch at work and on the go either.
Of course it is always easier to cook at home, but you could also simply make a bit more of your dinner in the evening and cook your keto lunch for the office at the same time.
As with breakfast, there are different types for lunch as well: on the one hand you can of course tell the savoury people from the sweet ones, but there are also those who are lucky enough to have a kitchen at work and those who have no kitchen available for their lunch. And then there are those of us who do not even have an undisturbed place to eat, because they have to eat in the car or on the train instead, on the way from one appointment to the next.
In a moment we will try to fit our keto recipes and ideas into a simple overview. Before that we would like to say something general about the time you should take to eat, and not only during your lunch break.
Good things take time
It is important to have enough time for a meal!
Hormones and enzymes that our body needs for digestion require time to unfold their effect. Many enzymes are also produced only in certain glands and therefore only at certain “places” in the digestive tract. Carbohydrates, for example, are broken down in the mouth by amylases. If you simply gulp your food down, these amylases cannot work properly here at all.
It is the same, or similar, with many other enzymes.
Hormones do not digest food components directly, but they are important for triggering the production of the actual digestive substances and for controlling the right amount. Slow and sufficient chewing is also important for optimal digestion. Food that has not been chopped up enough cannot be broken down perfectly in the stomach and therefore cannot be digested optimally in the gut either.
Another reason to eat more slowly is that digestive hormones can start working while you are still eating. That means that if you eat slowly, your satiety sets in slowly too and you feel full sooner than if you gulp so fast that the only body signal which stops you is a painfully stretched stomach.
So give yourself and your body enough time to digest and to enjoy your lunch!

1. The roadrunner
Are you one of the business sprinters, always on the move?
From one client to the next, from the home office to the real office, from the car onto the train and into the plane?
Then with these recipes you will probably catch a few jealous looks on your next business trip.
Our mini burgers, for example, pack up very nicely in the right box for taking with you. Since they also work perfectly as party finger food, you do not even need to dig out your spoon to eat them on the train.
2. The I have already prepared this type
You can prepare your keto lunch a little better if you may not have a hob, but do at least have a microwave and a table where you can use cutlery.
Our fruity, fresh mango and avocado bowl with ceviche is great to eat in your lunch break. You can simply finish the bowl at home and eat it at the office. The only kitchen appliance you need for it is a fridge. Since South American ceviche is a dish made of raw fish, it is absolutely essential to keep it well chilled at all times
Our tasty risotto does not need much either once it has been cooked in advance at home, only some way of warming the risotto up again. Risotto sounds a little odd against the background of a ketogenic diet, but do not worry, we have not accidentally reached into the wrong recipe folder: in this case our “rice” is made of cauliflower. Curious? Then simply have a look at our recipe.
Cauliflower rice is put to use in our chicken fricassee as well, where it is a perfect alternative to its carbohydrate rich namesake. And it is not only extremely tasty fresh, it also warms up and can be enjoyed beautifully at the office.
3. The privileged one
For those who can count themselves among the privileged and have, say, a complete kitchen available at work or work from a home office, we have picked out a few more keto lunches here. If you do belong to the privileged, though, you can very easily pick your own lunch from all of our recipes.
How about a “ketastically tasty” lamb with vegetables from the oven, for example? If you know and like okra, you are very well served with this one. If you are not among the okra fans, you can also use green asparagus, for instance, which is what Marina reaches for in our video for the recipe.
For the cheese lovers among the privileged we also have 2 real treats. So dive in, as long as you are not in the first 30 days of your challenge, because then you should unfortunately hold back a little longer and work your way through our cheese free recipes. But! How about one of these keto lunch recipes being your reward at the end of the challenge and at the start of your new way of eating?
