You should not have to do without keto desserts while you change the way you eat.
So today we would like to introduce a few of our dessert recipes, the ones we enjoy making most and like best.
As a rule, make sure these desserts do not round off every one of your meals. They are a better alternative than their conventional siblings, but they should still stay the exception in your diet.
An exception because, like main meals, they supply you with the macronutrients fat, carbohydrates and protein and give your body energy, but they deliver only very small amounts of health promoting micronutrients such as vitamins, minerals and trace elements.
And now let us get started.
Because sometimes even keto desserts have to be quick, we have picked out our fastest recipe for you here. Alongside the rhubarb crumble you will find among the vegan recipes later in this article, it is there when every minute counts.
Our bacon in a chocolate coat is another one you can make particularly fast. Simply fry as much bacon as you need and melt the chocolate alongside. Careful, chocolate should not be heated above 50 °C, otherwise it loses its shine and lumps can form.
Lay the fried bacon on a baking tray, cover it with chocolate and chopped almonds, let it cool and you are done.
2. Keto desserts with mascarpone
Mascarpone recipes are welcome in the keto kitchen too. That is why we at Foodpunk have developed several keto desserts with mascarpone for you, and we would like to introduce a few of them.
This mascarpone and papaya layered dessert is great when you want to prepare something in advance and have it ready when you need it. Simply layer mascarpone cream and papaya puree alternately in dessert glasses and chill. If you have no dessert glasses at hand, champagne flutes work too. For the papaya puree you also need a little xylitol or erythritol.
You will come across these two sugar alternatives quite often in ketogenic and low carb eating. If you want to know more about them, you can read our articles on erythritol and xylitol.
Another fruity mascarpone creation are our mascarpone quenelles on a delicious acerola coulis. You will usually find the acerola fruit puree this recipe needs in the freezer section of an organic shop.
No dessert collection would be complete without this section.
We have a few cold refreshments for you before we release you into the wide world of keto desserts.
For these ice creams you should definitely bring a little time and patience.
For this cookie dough ice cream you need low carb chocolate drops. You do not necessarily need an ice cream maker to prepare it. The ice cream turns out creamier if you stir it a few times while it freezes.
And if you prefer fruity ice cream, we have our strawberry cheesecake ice cream as an alternative to the cookie dough one. For this creation it helps to have an ice cream maker. Besides strawberries you can happily use raspberries if you like those better.
The question of vegan recipes always stays interesting, because keto desserts usually use dairy.
So in this article we want to look after vegan sweet tooths as well.
Among those tasty dessert variations is our coconut yoghurt with raspberry and rhubarb compote, which can be a perfect refreshment in spring and summer.
Going through our recipe collection we had to admit that the vegan section has some catching up to do. Still, we would like to show a few recipes you can turn into vegan keto desserts by swapping a few ingredients.
The binding you would get from eggs can also be achieved with locust bean gum, for example, and to get better volume you can use the liquid from a tin of chickpeas, or the soaking water left over at home after soaking pulses.
If cow’s milk yoghurt is the problem in one of our recipes, you can simply use coconut yoghurt or almond yoghurt. Just make sure they are as unsweetened as natural yoghurt would be.
You can use the “trick” with the soaking water from pulses to turn the following recipe into a vegan treat, for instance.
This Foodpunk pancake tower is perfect for your next brunch with friends or family and gives you the chance to enjoy your favourite fruit, in our case fresh strawberries.
Another vegan indulgence can be made of this recipe by simply swapping the grass fed butter for coconut oil.
This crumble tastes best of all when warm and is a fitting recipe for quick dessert making too.
We hope a few of our recipes will find their way into your personal recipe book, and we wish you a lot of fun making them.
