  • 1 chicken breast
  • 1 large tomato
  • 1 handful of baby spinach
  • 1/2 Avocado sliced

Anleitung

Sear the chicken breast in a pan of coconut oil. Alternatively, rub it in salt and thyme and cook it in the oven, as you would in the recipe for low-carb thyme chicken, for example. Wash the vegetables and let the water run off. Cut the tomatoes into slices and lay them out on a large plate. Drape the spinach over them.
Cut the avocado and chicken breast into slices and distribute both evenly across the plate in a mixed fashion. Sprinkle the blueberries on top. Whip up a dressing out of lime juice, olive oil and mustard, and then pour it over the salad before serving.
