Ingredients
  • 6 eggs
  • 40 g coconut flour
  • 1 tsp. locust bean gum
  • 100 g coconut oil
  • 200 ml of sparkling mineral water
  • 30 g xylitol
  • 1/4 tsp. salt

Anleitung

Beat and froth the eggs together with the xylitol.
Melt the coconut oil in a water bath. To help it cool down faster, add the mineral water. Mix both with the eggs. The coconut oil-water mixture must not be too hot, or the egg white will congeal.
Mix the coconut flour, locust bean gum and salt, strain it over the dough and then mix together.
Heat up a crêpes iron and then apply a thin layer of coconut oil. This is easiest if you spread the coconut oil with a paper towel. Alternatively, you can also use a pan. Spread a scoopful of dough very thinly onto the hot iron. The iron or pan must not be too hot, otherwise bubbles will form in the dough. With a little practice, you will find the perfect temperature. Brown the crêpe lightly on both sides.
Bake the other 9 crêpes in the same manner. You can garnish them with cinnamon and xylitol, or use low-carb chocolate creme.
